First on our radar is the legendary “Big Monster Sushi,” a food truck tucked away under the banyan tree in old Koloa Town. With a menu that boasts a fusion of Hawaiian and international flavors, this truck is a culinary oasis. Picture yourself sinking your teeth into a succulent one of their large sushi rolls or taking a bite into a fresh poke bowl. If you are a vegan, they have a variety of veggies on the menu to choose from, the veggie sushi rolls are the best!

The “D Green’s BBQ” truck, adorned with vibrant pig, instantly transports us to the world off BBQ. The charismatic owner, a surfer-chef named Darren, welcomes us with a laid-back aloha spirit and introduces us to his unique creations. As I approached, I could see flames leaping from the grill, dancing with the succulent cuts of meat. The master behind the grill, a culinary warrior, skillfully wielded his spatula and tongs, creating a mouthwatering symphony of sizzles and cracks. Smoke billows from its grill, wafting through the air, and teasing your nostrils. The aroma of slow-cooked, tender ribs marinated in a secret sauce is irresistible. One bite, and you’re transported to the heart of the Deep South, where BBQ is a way of life. The smoky flavor, the melt-in-your-mouth texture, and the tangy BBQ sauce make it a feast fit for a carnivorous king. With a flourish, he served me juicy, perfectly marinated ribs that melted in my mouth, leaving behind a trail of smoky goodness. We can’t resist trying the lychee wood smoked pork, chicken and beef potato salad and delicious coleslaw. The Hawaiian BBQ pulled pork sandwich, topped with tangy pineapple salsa and nestled between fluffy buns. The explosion of flavors will transport you to a tropical paradise with every bite. Each bite is a symphony of flavors, with the tender pork melting in our mouths, perfectly complemented by the sweet and tangy smokey taste. It’s like riding a wave of flavors, a true celebration of local BBQ cuisine. Classic BBQ with brisket, links, baked beans, and a slice of bread. Darren knows how to BBQ. Ribs that fall off the bone, pulled pork, tangy and spicy BBQ sauce, and homemade hot sauce makes this joint a fan favorite on Kauai.

As we ventured to the coastal town of Poipu, we stumble upon a food truck that promises to satisfy our cravings for all things sweet and indulgent. The ” Waikomo Shave Ice” is in a trailer near the famous Da Crack Mexican take-out window. Some say this is the best shave ice on Kauai. Their flavors, fluffy ice, and bits of fruit make for a refreshing experience. A short drive from Poipu Beach.  We can’t resist trying the “Loco Coco Bowl” a luscious concoction of creamy coconut ice cream, drizzled with warm caramel sauce, and topped with a sprinkle of toasted macadamia nuts. Each spoonful is a tropical delight, with the velvety ice cream melting in our mouths, and the crunchy Coconut shavings adding a delightful texture served in a coconut. It’s like diving into a pool of tropical sweetness, a true paradise for dessert lovers, especially on a hot day in paradise. A perfect spot on the way to Lihue Airport for your morning flight off the island or if heading to Kalapaki Beach from the airport. The “Aloha Liege Waffle” food truck offers excellent Belgian-inspired waffles served all day, a friendly staff, and espresso to start your morning off right. Only 2 miles from the airport. Look for the black trailer with umbrellas. If you’re looking for something sweet with your coffee, their waffles with heaps of toppings won’t disappoint. Our next stop on this culinary journey takes us to the bustling streets of Kapaa Town, where we stumble upon a food truck that immediately captures our attention. Painted in vibrant hues of blue and green, the “Al Pastor Taco’s” truck exudes an irresistible charm. As we approach, the tantalizing aroma of spices filling the air, beckoning us closer. The friendly owner, an islander named Fawn, greets us with a warm smile and introduces us to her island-inspired creations. We can’t resist trying their fish tacos, quesadillas, burritos and more. The tacos are the best with a fiery fusion of succulent shrimp marinated in a secret blend of spices, topped with a zesty mango salsa that ignites our taste buds with a burst of tropical flavors. As we savor each bite, the crispy outer layer of the shrimp gives way to a juicy explosion of flavor, transporting us to a culinary paradise. It’s like a fiery volcano erupting in our mouths, leaving us craving for more. The moment you take your first bite of their zesty fish tacos, your taste buds explode with a symphony of flavors.
